  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8 or 9-inch baking tin with parchment paper.
  2. In a microwave-safe bowl, melt chopped dark chocolate and butter in 30-second intervals until smooth.
  3. Stir in brown sugar and granulated sugar until combined.
  4. Add eggs one at a time, whisking well after each addition.
  5. Sift in flour and salt, then gently fold until just combined.
  6. Pour batter into prepared tin and bake for 25-30 minutes until set.
  7. Remove from oven, poke holes in brownies, and pour espresso over them to soak.
