  • 1 box (13.25 oz) vanilla cake mix
  • ⅓ cup neutral oil (vegetable, canola, or avocado)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 oz candy melts
  • Nonpareils or sprinkles for decoration

Instructions

  1. Preheat your oven to 325-350°F (162-175°C).
  2. In a large bowl, mix together the cake mix, oil, milk (or water), eggs, and softened butter until well combined.
  3. Pour the batter into a greased baking pan and bake according to package instructions until a toothpick inserted in the center comes out clean.
  4. Once baked, crumble the cooled cake into a mixing bowl.
  5. Prepare the buttercream filling by mixing powdered sugar, vanilla extract, salt, and milk until smooth; add this to the crumbled cake and mix until combined.
  6. Roll mixture into balls about 1¼ inches in diameter and chill in the freezer for 15 minutes.
  7. Dip lollipop sticks into melted candy melts and insert them halfway into each cake ball; freeze again for 15 minutes.
  8. Coat each cake pop in melted candy melts and sprinkle with decorations before placing them upright in a styrofoam block to dry.
