  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 1 1/2 cups mini vegan marshmallows

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
  3. In another bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add eggs and vanilla; mix well.
  4. Gradually incorporate flour, baking soda, and salt until just combined. Fold in chocolate chips.
  5. Spread half of the dough over the crust, layer with marshmallows and broken graham crackers. Top with remaining cookie dough.
  6. Bake for 25–28 minutes until golden brown. Allow to cool before cutting into squares.
