  • 46 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 cup chicken broth
  • 1 tablespoon fresh herbs (thyme or rosemary)

Instructions

  1. Season the chicken thighs with salt, black pepper, garlic powder, onion powder, and smoked paprika.
  2. Heat olive oil in a skillet over medium heat. Sear the chicken thighs skin-side down for about 4-5 minutes until golden brown.
  3. Place chopped vegetables at the bottom of the slow cooker (optional). Add seared chicken thighs on top and pour in the chicken broth.
  4. Cover and cook on low for 6-8 hours or high for about 4 hours until fully cooked through (internal temperature should reach 165°F).
