  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 pound pasta (spaghetti or your choice)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse cherry tomatoes and place them in a large bowl. Cut the top off the garlic head.
  3. Drizzle tomatoes with 2 tablespoons olive oil, season with salt, pepper, and red pepper flakes; toss to coat.
  4. Spread seasoned tomatoes on a parchment-lined baking sheet; place garlic cut side up alongside.
  5. Roast for 25–30 minutes until tomatoes are blistered and garlic is soft.
  6. Cook pasta in salted boiling water according to package instructions until al dente; reserve 1 cup of pasta water before draining.
  7. Squeeze roasted garlic cloves into a mixing bowl; add roasted tomatoes and juices.
  8. Mash together slightly; stir in remaining olive oil, salt, pepper, and reserved pasta water as needed.
  9. Toss cooked pasta with the mixture; fold in fresh basil and serve topped with Parmesan.
