  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs, room temperature
  • 1¼ cups canned pumpkin puree
  • 2 tsp vanilla extract
  • 4 oz cream cheese, room temperature
  • 4 tbsp unsalted butter, room temperature
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, baking soda, cinnamon, ginger, nutmeg, cloves, cardamom, and salt; whisk together.
  3. In another bowl, mix canola oil, granulated sugar, light brown sugar, eggs, pumpkin puree, and vanilla until smooth.
  4. Gradually add dry ingredients to wet ingredients; stir gently until combined.
  5. Pour batter into a greased loaf pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. For frosting: Beat cream cheese and butter until creamy; add vanilla and powdered sugar. Adjust consistency with milk if needed.
