  • 2 tablespoons olive oil
  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (24-ounce) jar marinara sauce
  • 1 pound penne pasta (uncooked)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ¼ cup fresh basil or parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken pieces and season with salt, pepper, and Italian seasoning. Cook until lightly browned, about 5 minutes. Remove from pot and set aside.
  2. In the same pot, sauté minced garlic for about 1 minute until fragrant.
  3. Stir in chicken broth and marinara sauce; bring to a boil. Add uncooked pasta, reduce heat, cover, and simmer for 12–15 minutes until pasta is al dente.
  4. Return cooked chicken to the pot and stir in mozzarella and parmesan cheese until melted.
  5. Garnish with fresh basil or parsley before serving.
