  • 1 lb ground beef
  • 1 egg
  • 1 small onion, diced finely
  • 4 garlic cloves, minced
  • 1/4 cup finely chopped parsley
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup parmesan cheese
  • 4 oz fresh mozzarella
  • 12 tbsp olive oil
  • 2 cups marinara sauce
  • 1/2 tsp basil, dried
  • 1/2 tsp oregano, dried
  • 1/2 tsp salt
  • pepper

Instructions

  1. In a large mixing bowl, combine ground beef, egg, diced onion, minced garlic, parsley, Panko breadcrumbs, parmesan cheese, basil, oregano, salt, and pepper. Mix until well combined.
  2. Cut the fresh mozzarella into small cubes.
  3. Scoop about 2 tablespoons of the meat mixture and flatten it slightly. Place a mozzarella cube in the center and roll it into a ball. Repeat until all meatballs are formed (about 12).
  4. Heat olive oil in a non-stick frying pan over medium-high heat. Add meatballs and brown on all sides.
  5. Once browned, pour marinara sauce over meatballs and cover. Let them simmer for about 10 minutes, flipping halfway through.
