  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1/2 cup red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, peeled, seeded, and diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 4 ounces feta cheese (or plant-based alternative), crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas; pat dry.
  2. Chop the red onion, halve the cherry tomatoes, peel and dice the cucumber, and halve the olives.
  3. In a small bowl, whisk olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  4. In a large mixing bowl, combine chickpeas, red onion, tomatoes, cucumber, olives, feta cheese (or alternative), parsley, and mint. Pour dressing over salad and toss gently.
