  • 2 tablespoons olive oil or butter
  • 1 pound boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, rinsed
  • 2 cups low-sodium chicken broth
  • 1 medium carrot, diced
  • 1 cup frozen peas
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Set the Instant Pot to Sauté mode and heat olive oil. Sear the chicken pieces for 3–4 minutes until lightly browned. Remove and set aside.
  2. In the same pot, sauté onion and garlic for 1–2 minutes until fragrant.
  3. Deglaze with ¼ cup of chicken broth, scraping up browned bits.
  4. Add rice and seasonings; mix well.
  5. Pour in remaining chicken broth and return chicken pieces without stirring.
  6. Close the lid; cook on Manual/High Pressure for 8 minutes with a natural release for 10 minutes.
  7. Stir in carrots and peas; cover for an additional 5 minutes on Keep Warm mode.
  8. Fluff rice with a fork before serving.
