  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup crumbled feta cheese
  • Fresh parsley (for garnish)
  • 1 lemon (for serving)

Instructions

  1. In a mixing bowl, whisk together honey, olive oil, apple vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish and pour the marinade over it. Seal and refrigerate for at least 30 minutes (preferably up to 4 hours).
  3. Preheat oven to 400°F (200°C).
  4. Remove chicken from marinade and place it in a baking dish. Spoon crumbled feta over each piece.
  5. Bake for 25 to 30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and the feta is bubbly.
  6. Let rest for 5 minutes before serving with lemon wedges and garnish with parsley.
