  • 1/2 cup milk
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter with sugar and honey until light and fluffy.
  4. Beat in eggs one at a time followed by vanilla extract.
  5. Gradually mix in dry ingredients alternating with milk until just combined.
  6. Gently fold in diced peaches.
  7. Fill cupcake liners two-thirds full with batter.
  8. Bake for 18–22 minutes or until a toothpick comes out clean. Allow cooling.
  9. For frosting, beat cream cheese with butter until smooth, then add honey and powdered sugar until fluffy.
