  • 4 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Rub salmon fillets with olive oil and season with smoked paprika, garlic powder, salt, and black pepper.
  3. Grill the seasoned salmon for about 4–5 minutes per side until cooked through and slightly charred.
  4. In a medium saucepan, combine jasmine rice with coconut milk and water; bring to a boil. Reduce heat and simmer for 15–20 minutes until tender.
  5. In a large bowl, mix diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, salt, and pepper to create the salsa.
  6. Serve grilled salmon over coconut rice topped with mango salsa.
