- 4 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup water
- 1 ripe mango, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper, to taste
- Preheat your grill to medium-high heat.
- Rub salmon fillets with olive oil and season with smoked paprika, garlic powder, salt, and black pepper.
- Grill the seasoned salmon for about 4–5 minutes per side until cooked through and slightly charred.
- In a medium saucepan, combine jasmine rice with coconut milk and water; bring to a boil. Reduce heat and simmer for 15–20 minutes until tender.
- In a large bowl, mix diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, salt, and pepper to create the salsa.
- Serve grilled salmon over coconut rice topped with mango salsa.
