  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • Salt & pepper to taste
  • 1 small head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, cubed
  • 1 cup Greek yogurt
  • 1 cucumber, grated & squeezed dry
  • 1 tbsp fresh dill, chopped

Instructions

  1. Marinate the chicken: Combine olive oil, minced garlic, oregano, lemon juice, salt, and pepper in a bowl. Coat chicken breasts well and marinate for at least 20 minutes.
  2. Cook the chicken: Heat grill or skillet over medium-high heat. Cook marinated chicken for 5-7 minutes per side until golden brown and cooked through (165°F). Allow resting before slicing.
  3. Make tzatziki: In a bowl, mix Greek yogurt, grated cucumber (squeezed dry), minced garlic, chopped dill, lemon juice, salt, and pepper until combined.
  4. Assemble the salad: In bowls, layer chopped romaine lettuce as the base followed by cherry tomatoes, sliced cucumber, red onion, cubed feta cheese, and sliced grilled chicken. Top with tzatziki sauce.
