  • 2 large yellow onions
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • ½ cup beef broth (or vegetable broth)
  • 4 large Yukon Gold potatoes, sliced ¼-inch thick
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup Parmesan cheese, grated
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs
  • Extra Parmesan cheese
  • Crispy fried onions (optional)

Instructions

  1. Heat butter and olive oil in a skillet over medium heat. Add sliced onions with salt, pepper, sugar (optional), garlic powder, and thyme. Cook until caramelized, about 15-20 minutes.
  2. Preheat oven to 375°F (190°C). Grease a baking dish with butter and layer half of the sliced potatoes at the bottom. Season with salt and pepper.
  3. Spread half of the caramelized onion mixture over the potatoes and sprinkle half of both cheeses on top.
  4. Repeat with another layer of potatoes, remaining onions, and cheeses. Pour cream or milk evenly over everything.
  5. Cover with foil and bake for about 45 minutes; remove foil for the last 15 minutes to brown the cheese.
  6. Let cool slightly before serving; garnish with fresh thyme if desired.
