  • 4 large yellow onions
  • 3 cloves garlic
  • 23 sprigs fresh thyme
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cups beef broth (or chicken/vegetable broth)
  • 1 cup heavy cream
  • 1 cup Gruyère cheese (grated)
  • 12 oz egg noodles or pappardelle
  • Fresh chives (for garnish)

Instructions

  1. In a large pot or Dutch oven, melt butter and olive oil over medium heat. Add sliced onions and salt; cook for 30–40 minutes until caramelized.
  2. Stir in minced garlic and thyme. Deglaze with white apple vinegar if using, then add beef broth and simmer for about 10 minutes.
  3. Boil salted water in another pot and cook egg noodles until just shy of al dente. Reserve 1 cup of pasta water before draining.
  4. Combine drained pasta with the onion mixture in the large pot.
  5. Gradually stir in heavy cream followed by Gruyère cheese until melted into a smooth sauce.
  6. Add softened cream cheese, adjusting consistency with reserved pasta water as needed. Garnish with fresh chives before serving.
