Ingredients

Scale
  • 2 ½ cups heavy cream
  • 1 ½ cups whole milk
  • 1 tablespoon vanilla extract
  • 6 large egg yolks
  • 1 ¼ cups granulated sugar
  • 14 ounces Oreo cookies (crushed)

Instructions

  1. Heat heavy cream, whole milk, and vanilla in a saucepan over medium heat until steaming (about 8 minutes). Do not boil.
  2. In a bowl, whisk egg yolks and sugar until thick and pale. Gradually add the hot milk mixture while whisking to temper the eggs. Return to saucepan.
  3. Cook on medium-low heat until the mixture reaches 180°F, stirring constantly. Remove from heat.
  4. Strain the custard through a fine mesh strainer into a bowl set over an ice bath. Cool completely, cover with plastic wrap directly on the surface, and refrigerate for at least 4 hours or overnight.
  5. Crush Oreos in a resealable bag and reserve about ¾ cup for mixing later.
  6. Pour chilled custard into an ice cream maker and churn according to instructions (20–25 minutes), adding reserved Oreos in the last few minutes.
  7. Layer ice cream with remaining crushed Oreos in an airtight container and freeze for at least 2 hours before serving.
