  • 200 grams dried pasta (or 300 grams fresh pasta)
  • 1 tablespoon olive oil
  • 1 chicken breast
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 3 cloves garlic (finely chopped)
  • 1 tablespoon fresh rosemary leaves (roughly chopped)
  • ¾ cup cream
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 50 grams parmesan (very finely grated)
  • Lemon zest (to finish)
  • Extra rosemary (to finish)

Instructions

  1. Cook the pasta in salted boiling water until al dente; reserve a cup of pasta water before draining.
  2. Flatten the chicken breast to an even thickness, season with salt and pepper, then dust with flour.
  3. In a fry pan, heat olive oil over medium-high heat and fry the chicken for about 2 minutes on each side until cooked through. Wrap in foil and set aside.
  4. In the same pan, melt butter over medium heat and sauté garlic until fragrant. Add rosemary, then pour in cream and let simmer gently.
  5. Gradually mix in parmesan cheese, followed by black pepper and lemon juice, allowing the sauce to thicken slightly with reserved pasta water.
  6. Toss cooked pasta into the sauce until well combined.
  7. Slice the chicken and serve it atop or mixed into the creamy pasta. Garnish with extra rosemary leaves and lemon zest.
