  • 4 cups vegetable broth
  • 2 cups sliced mushrooms
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup white apple vinegar
  • 1/4 cup grated Parmesan cheese (or plant-based alternative)
  • 2 tbsp butter (or additional olive oil)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil and butter in a large pan over medium heat until melted.
  2. Sauté the chopped onions for about 2–3 minutes until soft. Add minced garlic and cook for another minute.
  3. Add sliced mushrooms and cook until they release moisture, about 5 minutes.
  4. Stir in Arborio rice and toast for about 2 minutes until slightly translucent.
  5. Pour in white apple vinegar and cook until absorbed.
  6. Gradually add vegetable broth one ladle at a time, stirring frequently until each addition is absorbed.
  7. Continue until rice is creamy and tender, about 20 minutes.
  8. Stir in grated Parmesan cheese (or alternative), seasoning with salt and pepper to taste.
