  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese (or cheese of choice)
  • 1/4 cup diced bell peppers
  • 1/4 cup fresh spinach, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with nonstick cooking spray.
  2. In a blender, combine eggs, cottage cheese, garlic powder, onion powder, salt, and pepper. Blend until smooth.
  3. Stir in shredded cheese, diced bell peppers, spinach, and any optional cooked chicken.
  4. Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  5. Bake for 20–25 minutes or until set and lightly golden on top.
  6. Allow cooling for 5 minutes before removing from the tin. Serve warm or store in the fridge for up to four days.
