Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, ground cinnamon, and lemon zest until well mixed.
  3. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gradually add powdered sugar while continuing to beat until glossy. Reserve 1/4 cup for glazing.
  4. Gently fold the remaining meringue into the almond mixture to create dough.
  5. Roll out the dough between two sheets of parchment paper to about 1/4-inch thickness. Cut out star shapes with a cookie cutter and place them on the prepared baking sheet.
  6. Brush each cookie with the reserved meringue glaze and bake for 12-15 minutes until set but soft in the center. Allow cooling completely before serving.
