  • 1 cup Granulated sugar
  • 1/2 tsp Kosher salt
  • 2 tsp Vanilla extract
  • 2 Eggs
  • 1/3 cup Vegetable oil
  • 1/3 cup Cocoa powder (Dutch processed)
  • 1 1/2 cups Flour
  • 1 tsp Baking soda
  • 1 cup Hot coffee
  • 2/3 cup Unsalted butter (room temperature)
  • 2/3 cup Creamy peanut butter
  • 1 1/2 cups Powdered sugar
  • 2 tbsp Heavy cream (or milk)
  • 1224 Mini peanut butter cups
  • 12 tsp Peanut butter (for the filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine sugar, salt, cocoa powder, flour, and baking soda.
  3. In another bowl, whisk together eggs, vegetable oil, and vanilla extract. Gradually add hot coffee while stirring.
  4. Combine wet and dry ingredients until just mixed; avoid overmixing.
  5. Fill muffin tins two-thirds full with batter and bake for 20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool for 10 minutes before transferring to a wire rack.
  7. Prepare the filling by mixing peanut butter in a small bowl.
  8. Once cooled, fill each cupcake center with about one teaspoon of peanut butter.
  9. For frosting: Beat unsalted butter and peanut butter until fluffy; gradually add powdered sugar and heavy cream until desired consistency is reached.
  10. Frost each cupcake generously and top with mini peanut butter cups.
