  • 1 tablespoon soy sauce
  • 1 tablespoon peanut oil (or vegetable oil)
  • 1 tablespoon cornstarch
  • 1/2 cup chicken stock
  • 2 tablespoons dry apple juice
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons brown sugar
  • 1 head broccoli, cut into bite-sized florets
  • 3 garlic cloves, minced
  • 2 teaspoons ginger, minced

Instructions

  1. Slice beef thinly against the grain and marinate with soy sauce, peanut oil, and cornstarch for at least 10 minutes.
  2. In a medium-sized bowl, combine chicken stock, dry apple juice, soy sauces, and brown sugar. Mix well until fully combined.
  3. Add 1/4 cup water to a large nonstick skillet over medium-high heat until boiling. Add broccoli and cover to steam until tender, about 1 minute. Transfer broccoli to a plate once done.
  4. Heat peanut oil in the skillet over medium-high heat until hot. Spread marinated steak in a single layer in the skillet; allow cooking undisturbed until browned on one side. Flip steak pieces to cook the other side briefly while ensuring they remain pink inside.
  5. Stir in minced garlic and ginger; cook briefly until fragrant.
  6. Return steamed broccoli to the skillet with beef. Stir sauce mixture again to dissolve cornstarch fully before pouring it over beef and broccoli. Cook while stirring until the sauce thickens, about 1 minute. Transfer everything onto a plate immediately and serve hot as a main dish.
