  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado and mix in lemon juice, salt, and pepper until smooth.
  2. If desired, spread mayonnaise on one side of each slice of bread. On one slice, spread the avocado mixture evenly. Layer with shredded chicken followed by cheese. Top with the second slice of bread, mayo side facing out.
  3. Heat butter in a skillet over medium heat and grill the sandwich for about 3–4 minutes per side until golden brown and cheese is melted.
  4. Remove from heat, slice diagonally, and serve hot.
