  • ½ cup unsalted butter (melted)
  • ¼ cup granulated sugar
  • 16 ounces cream cheese (softened)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips (plus extra for topping)
  • ¼ cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press firmly into a greased 9×9-inch baking dish. Bake for 10 minutes until golden.
  2. In another bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and butterscotch chips until combined.
  3. Pour the filling over the crust and spread evenly. Bake for 25-30 minutes or until the edges are set and the center is slightly jiggly.
  4. Allow to cool at room temperature for 30 minutes before refrigerating for at least 2 hours to set.
  5. Cut into squares and top with additional butterscotch chips if desired.
