  • 2 cups cooked chicken, shredded
  • ½ cup buffalo sauce
  • 1 tablespoon butter (for onions)
  • 1 medium onion, thinly sliced
  • 8 slices sourdough bread
  • 2 tablespoons butter (for spreading)
  • 2 cups shredded mozzarella cheese
  • Optional: ¼ cup blue cheese crumbles

Instructions

  1. In a bowl, mix shredded chicken with buffalo sauce until fully coated; set aside.
  2. Heat 1 tablespoon of butter in a skillet over medium heat. Add sliced onions and cook for about 8–10 minutes until golden and soft; remove from pan.
  3. Spread softened butter on one side of each bread slice. On a flat surface, layer four slices (butter-side down) with mozzarella cheese, buffalo chicken, caramelized onions, more cheese, and top with remaining bread slices (butter-side out).
  4. Heat a skillet or griddle over medium heat. Cook sandwiches for 3–4 minutes per side until golden brown and cheese is melted.
  5. Cut in half and serve hot with ranch or blue cheese dressing.
