  • 1 pound boneless, skinless chicken breasts
  • 1 cup buffalo sauce
  • 2 cups cooked rice (your choice)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine chicken with olive oil, garlic powder, onion powder, salt, and pepper. Toss well.
  3. Pour half of the buffalo sauce over the chicken and coat evenly.
  4. Place chicken on a lined baking sheet and bake for 20-25 minutes until cooked through (internal temperature should reach 165°F / 75°C).
  5. Shred the chicken once cooled slightly and toss with remaining buffalo sauce.
  6. Serve over cooked rice in bowls, topping with celery, cherry tomatoes, avocado, and ranch dressing.
