  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheddar cheese
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing or blue cheese dressing
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine chicken with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Coat chicken with half of the buffalo sauce and place on a lined baking sheet.
  4. Bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 5 minutes before shredding it with forks.
  6. Toss shredded chicken with remaining buffalo sauce.
  7. Cook rice according to package instructions or sauté cauliflower rice in olive oil until tender.
  8. Assemble bowls by placing rice at the base and topping with shredded chicken and desired toppings.
