  • 1 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup chopped celery
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup ranch dressing or blue cheese dressing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Coat the chicken with half of the buffalo sauce.
  4. Place the chicken on a parchment-lined baking sheet and bake for 20-25 minutes until fully cooked.
