  • 24 ounces cherry tomatoes, halved

  • 1/2 small shallot, chopped
  • 6 ounces mini bocconcini (mozzarella balls), halved
  • 1 ounce fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste
  • 2 large slices sourdough bread
  • 1.5 teaspoons olive oil
  • 1 teaspoon garlic powder (optional)

Instructions

  1. 1. Cook the pasta according to package directions in a large pot of boiling water. Drain and let cool.
  2. 2. In a large salad bowl, combine cherry tomatoes, garlic, shallot, mini mozzarella balls, olive oil, apple cider vinegar, basil, salt, and pepper. Toss gently.
