  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 tablespoon tomato paste
  • 1 cup beef broth or water

Instructions

  1. Start by prepping your ingredients: chop the onion, mince the garlic, grate the ginger, and cube the beef.
  2. In a Dutch oven over medium heat, add oil and sauté the onion until translucent (about 5 minutes). Add garlic and ginger; cook for an additional 2 minutes.
  3. Add beef cubes to the pot and brown on all sides (around 5-7 minutes). Stir occasionally to prevent sticking.
  4. Stir in curry powder, turmeric, cumin, and optional chili flakes; cook for another minute.
  5. Mix in tomato paste, then pour in coconut milk and broth (or water). Bring to a gentle simmer and reduce heat to low.
  6. Cover and simmer for about 2 hours until beef is tender, stirring occasionally.
