  • 2 cups beef or lamb broth

  • 3 sprigs fresh thyme
  • 2 bay leaves

  2. In the same pot, sauté onions until translucent. Stir in garlic, carrots, and celery; cook for an additional five minutes.
  3. Add tomato paste and mix thoroughly before pouring in apple vinegar and broth, scraping browned bits from the pot.
  4. Return lamb shanks to the pot and add herbs and bay leaves. Bring to a gentle simmer.
  5. Preheat your oven to 325°F (163°C) and braise the covered pot for about 2-3 hours until tender.
