  • 2/3 cup brown sugar
  • 1 tsp cinnamon
  • 28 oz cream cheese (room temperature)
  • 4 eggs
  • 3 cups graham cracker crumbs
  • 3/4 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 cup sour cream
  • 2 tbsp lemon juice
  • 4 tbsp water
  • 1/2 cup butter (unsalted)
  • 4 tsp cornstarch (mixed with a little bit of water)
  • 1 tbsp granulated sugar
  • 1/2 tsp nutmeg
  • 1/3 cup brown sugar for crumble
  • 3.1 oz butter (melted) for crumble
  • 1 tsp cinnamon for crumble
  • 1/3 tsp kosher salt for crumble

Instructions

  1. Prepare the apple filling: In a saucepan, cook apples with brown sugar, cinnamon, lemon juice, and butter until softened. Stir in cornstarch mixed with water to thicken.
  2. Make the crust: Mix graham cracker crumbs with melted butter and sugar. Press into a springform pan.
  3. Prepare the cheesecake filling: Beat cream cheese until smooth; add vanilla extract, sugar, sour cream, and eggs gradually until well combined.
  4. Assemble: Layer half of the cheesecake mixture over the crust, spread apple filling on top, and pour remaining cheesecake mixture over it.
  5. Bake at 350°F (175°C) for about 60 minutes or until slightly jiggly in the center. Cool in the oven with the door ajar for an hour before refrigerating.
  6. Prepare crumble topping: Combine flour, oats, brown sugar, and melted butter until crumbly; sprinkle over cooled cheesecake.
  7. Chill for at least four hours before serving.
