  • 2 1/2 cups graham cracker crumbs
  • 1/8 cup brown sugar
  • 10 tablespoons unsalted butter
  • 2 cups apple cider (reduced)
  • 24 oz cream cheese
  • 3/4 cup white granulated sugar
  • 1/2 cup sour cream
  • 4 large eggs
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 tsp ground cinnamon
  • 1 tablespoon melted butter
  • 1 tablespoon apple cider
  • 1/2 cup white granulated sugar (for topping)
  • 2 teaspoons ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C). Combine graham cracker crumbs and brown sugar in a bowl; stir in melted butter and press into the bottom of a springform pan.
  2. Simmer apple cider in a saucepan until reduced to about 1/2 cup; let cool.
  3. Beat cream cheese until smooth, then mix in sugar, sour cream, cooled apple cider, and vanilla extract. Add eggs one at a time.
  4. In another bowl, mix together brown sugar, flour, and cinnamon; fold into the cheesecake mixture.
  5. Pour the filling over the crust and bake for about 80 minutes until slightly wobbly in the center. Cool completely before refrigerating for at least four hours.
  6. For the topping, mix melted butter with apple cider and combine with sugar and cinnamon before sprinkling on top just before serving.
