Instructions

  1. Pour 1 cup of apple cider into a small saucepan. Bring it to a simmer over medium heat. Continue simmering until the liquid reduces to just 1/4 cup. This should take about 15-20 minutes. Once done, set it aside to cool completely.
  2. In a large bowl, cream together unsalted butter and granulated sugar. Mix until the mixture is light and fluffy.
  3. Beat in each egg one at a time into the creamed mixture. Afterward, stir in the vanilla extract.
  4. In another bowl, whisk together all-purpose flour, baking soda, and salt. This helps ensure even distribution of dry ingredients.
  5. Gradually add the dry mixture into the wet ingredients. Mix gently until just combined; avoid over-mixing.
  6. Stir in the cooled reduced apple cider along with the caramel bits or chopped soft caramels. Ensure they are evenly distributed throughout the dough.
  7. Cover your bowl with plastic wrap or a lid. Chill in the refrigerator for at least 30 minutes. This step prevents excessive spreading during baking.
  8. Preheat your oven to 375°F (190°C). Line your baking sheets with parchment paper to prevent sticking.
